I Think It's Time....

to update this thing huh? I've been crazy busy the past few months. My reasoning for being MIA for so long is because I had to take the OAT (Optometry Admissions Test) on October 11. I was that person who really had not life for the past few months with their nose in the books. :( However, it did pay off! I am happy to say that I received a 320 on my test. I'm sure many of you wonder..."what does that mean?" Well the average score for Optometry school ranges between 320-340. Of course I would have loved to gotten a little better score, but who doesn't? I am pleased with my score and believe that I will be successful getting into one school at least. lol I am planning on applying to 7 schools. The ranging states are: Pennsylvania, Puerto Rico (haha), Tennessee, Texas, Arizona, California, and Florida (Nova Southeastern and my #1 choice). The application process is ridiculous and EXPENSIVE ($650 to be exact!) of course. It just takes time and I need to revise my essay. Of course my awesome boss has helped me decide on the schools that I should apply to. We constantly go over everything to make sure everything is in order. :)

Now that I have the test behind me, I've been preparing for my trip to Orlando next weekend for the Ace convention. I'm so excited I get to finally see the Harry Potter park in Island of Adventure! :) Then Thanksgiving, my birthday and Christmas! :) I have a pretty easy semester this time so I have been able to relax after the test.

Tonight I'm excited to attend my best friend's show. His band is playing tonight. It's their second show and I know they'll do great! :)

That's really all I've been up to since my last post. lol I told you...pretty boring. Hopefully the next post wont take as long! :)

Chocolate Cake

If you know me at all, you know that I LOVE meat and that I'm not a vegetarian nor a vegan. But I've been told how great vegan baked goods are from Caitlin. Now, when I cook cakes or cupcakes there is just SO much food. So my old roommate was so nice to pass this recipe onto me. It's perfect for 1 or 2 people. It is 1 8oz round pan instead of 2. It is a vegan chocolate cake. The thing that I love the most about this recipe is that it doesn't call for eggs (which I do not like and therefore I don't have in the house) and that the things that are in the cake are things that you typically have around the house. And if you don't and have to buy it, then when you buy it, you use so little of it that it last for such a long time. :) So without further ado...

Ladycation

I was down in Orlando a few weeks ago and my girlfriends and I were talking about having a mini vacation for just the girls since the guys were going off. SO we did! We decided to go to St. Augustine for some fun. My friend Tina and I used to live in St. Auggie and we loved every minute of it. We were so excited to get down there and go to some of our favorite spots. First we checked into our hotel which was walking distance to downtown. We checked in then layed out by the pool. We started to get hungry and started downtown to eat at the Florida Cracker Cafe. If you havent been GO! They have great food and a great atmosphere. After we ate we walked in a couple of shops then made our way to one of our favorites...Sangrias. Another must go place. It's upstairs and you can sit outside to overlook St. George street. We drank some sangria and listened to some live music. It started to get dark and made our way to Scarlets. They always have great bands playing. Not only was the band great but there were TONS of people there. There were several people from a wedding earlier that evening. We got the party started when we got there. No one was up near the band listening...so we did! :) We were supposed to make a couple more stops but...that didnt happen :). Here are a few pictures from our journey...

I love quotes. They all have such great meaning to them and influence everyone. I go to this website Hollies Quotes almost everyday. Whether I am having a really bad day or a really good day, this site makes my day better. The website contains quotes...only quotes. There are thousands of quotes on all sorts of topics. I can always find a quote that fits the way I am feeling. There is also a quote of the day on her site and it's always a good one. The one above is todays. If you follow me on facebook, myspace, or even twitter you'll see me post a quote every once in a while or on my info page. They all come from this site. Check it out. They are very comforting. :)

Spring Break - Family Fest

My spring break was probably the most interesting one ever. I was on Spring break at UNF but since I am taking Physics at fccj and their SB is the first week of April, I still had one class Monday and Wednesday from 10-1. It's was not too bad. I was able to spend some time with my mom while she was here and help my wonderful cousins move into their new house, and I am sure they will so kindly return the favor and help me move when the time comes. :) ANYWAY...the weekend before SB actually started we had a Family fest down in Orlando. My cousin Garrett is at spring training for the Astros so we headed down to "quietly cheer" for him from a distance. :) We also attended Universal Studios and Island of Adventure, which was such a fun outing. However, I do believe the favorite part of the "fest" was the fact there were 140 minor league baseball players staying at the same hotel...and might I add...VERY good looking ones. ;) During the week when I wasnt at school I also worked some and then had some down time to relax and catch up on some sleep. Caught up with some friends at Ruth's Chris in our own private room...always good to know people. Then off to Pussers where we wanted to catch some music but didnt make it in time. Saturday and Sunday I worked on some reading for the week ahead and watched the Harry Potter marathon. I know I know NERD! Next week is back to the school world...Anyway here are some exciting pictures from Family fest. ENJOY!

It Has Been a While....

It definitely has...it's been hard to think of things to write about. I keep thinking should I write something about Jim. But it's hard. It's hard to believe that he really is gone. You never think it will happen to you. I hate the fact that I cannot give him a call and talk to him or get advice (which was great at...especially boys..he knew a lot about that :) ). I miss him all the time and wish I could go back and spend more time. You know I think that I've been more angry than upset. But, I wont ramble on about my anger towards things about cancer or other things... Jim is a huge reason that I am the person I am today.
